sugar-free banana bread!
Here is a delicious banana bread recipe, and best of all it's sugar-free.
INGREDIENTS:
1 1/2 cups of wholemeal self-raising flour
1/2 cup of plain flour
1 tsp ground cinnamon
1/2 tsp ground nutmeg
1/2 tsp bicarbonate of soda
1/4 cup of stevia (or any sugar substitute)
1 cup of mashed bananas
2 eggs
1/2 cup of vegetable oil
1/3 cup milk
METHOD:
Combine all sifted dry ingredients in a large bowl. In a separate jug mix together all wet ingredients including mashed banana. P
our in and gently fold with a spatula. Pour mixture into a greased loaf tin and place in a moderate oven (180 degrees) for 50 minutes or until a skewer inserted in the center comes out clean. Let cool to room temp before serving.
